The eight rectangular trays with lids (of which only seven now survive) in the original service were intended for various hot starters. The shape of the tray presupposed that the individual portions of the dish would have a neat rectangular shape. The "heraldic" green frog in this case appears on the ring-shaped handle of the lid, where it is most visible to someone raising the lid and to those viewing the piece from a distance.
